I started the cook around midnight at 190, then wrapped it around 11 AM and hiked it up to 250 at 1 PM. It hit 195 internal around 4 PM. Let it sit for an hour in the cooler and here’s the result!

Looks spectacular. I’ve been working up to doing a brisket. Just got my first Traeger not long ago and I’ve been doing pork shoulders, ribs, and chicken on it to make sure I know what I’m doing first. Don’t want to ruin a $70+ piece of meat.
