I grilled this beautifully marbled prime grade outside skirt last night and my wife thought it was too rich and fatty. I mean….wtf. After 30 years of marriage, I still can’t get her to just savor the delicious flavor that rendered beef fat provides to a cut of steak.

  1. Looks great to me! although I have found sometimes with like wagyu and other really fatty cuts it helps to cook it past your normal medium rare. Maybe that was the issue?

    Maybe the fat needed to be rendered down a little bit more you could have done like a mini reverse sear cooked it on indirect for a bit then let it cool off, then hit it with a hot sear

  10. I don’t ever buy expensive cuts of steak. My wife won’t eat anything not cooked well done. I’ve learned to eat eye round steaks she thinks it’s all the same.

  15. It’s a nationality thing too, I notice USA prefers much more fatty/marbled cuts than the UK for instance.

    My wife is the same. She cuts the fat off of meat when she eats. Sometimes I look at her and say, “I don’t even know who you are anymore.”

    My wife is like that, on the rare occasion we go out for steaks she will sit there and cut out every bit of fat off the steak before she eats.

    Unfortunately my wife would probably agree with her… but my wife has a texture issue with a lot of meats. If the meat feels “off”, like hard chicken breast, or bits of fat (also known as deliciousness) she won’t eat much. Wouldn’t take much to push her to eat vegetarian most of the time.

    Most of the time I prefer fattier more flavorful cuts like ribeye and strip, but every now and then I do crave a good lean filet.

    My husband is the same way. He won’t even indulge in chicken skin. If we have or I make fried chicken he will pull the skin off.

    I don’t understand but I am not him. It could be a texture thing or maybe the taste is just unpleasant. I get it. I don’t like untoasted bread and peanut butter sandwiches are just too sticky in the mouth to eat. Tasty but, NO, on texture.

    One of my daughters prefers cheap chuck to the American Wagyu brisket from Costco specifically because it is drier and chewier.

    I’m ashamed to admit, but I’ve reached an age where rich, delicious, fatty cuts are starting to cause me major indigestion. Been shooting for decent marbling but avoiding amazing looking cuts like this one.

    My mother is like that . Never happy about anything in her old age . Very loving ,but very bitchy too.
    When we go over there I grill for them and always grill her a filet mignon cut trimmed by me. It’s the only meal she doesn’t complain about.
