Ingredients
800g Lamb mince (20% fat)
1 tbsp Garlic, minced
1 Medium red onion, grated/blitzed and strained – discard liquid
1 Medium red bell pepper, blitzed and strained – discard juices
1 tsp each of the following – cumin powder, dried parsley, salt
1 tbsp Smoked paprika
1 tbsp Aleppo pepper
2 tbsp Turkish red pepper paste
1/2 tsp Crushed chilli flakes (optional)

Method
Step 1 – In a large bowl, add the mince and all of the seasonings. Mix well to combine. Cover and refrigerate for at least 4 hours or for best results overnight.
Remove from the refrigerator 30 minutes prior to cooking.

Step 2 – Pre heat the oven to 220c
Grease a baking tray/sheet pan,
Spread the mixture evenly, divide into 6-7 long kebabs using a flat sided kitchen tool or something similar. Then make shallow indents along the kebabs and give a light spray or drizzle of oil. Cook for 12 minutes on the middle shelf, then on the top shelf, grill/broil for 3-4 minutes on the max temperature.

Step 3 – Remove from the oven. And let it cool, reserve 4 tablespoons
of the juices and discard the rest. Drizzle with the juices and serve with flatbreads, your favourite sauces and salad. Enjoy!
