Wondering what’s up with this lamb and if I missed something special by not picking it up.
It doesn’t show as well in the photo but in life the marbled cuts looked almost gray. And that’s really what gave me pause. And maybe because I wasn’t used to seeing so much marbling that what I was seeing was not desirable for some reason. Like tough connective tissue instead of fat?
Second photo was what the rest of the packs looked like (and what I’m more used to seeing)
Anyone have any insight?

As an Australian i am torn, the quality of those chops is so bad I am embarrassed to see them being sold overseas but also relieved that we keep some nice stuff for ourselves. That’s not marbling, the fat covering the back of the chop would be thicker and whiter .

Those just look oxidized and kinda old to me. It’s a really weird level of marbling for lamb. Like, suspiciously high level of marbling, but I’m sure they’d taste fine. I’d probably marinate them in some garlic and lemon to make sure the sweatiness gets cut, though, if they’re as old as they look.
Could be a different sheep breed. Most Australian lamb is going to be merino or Suffolk but there are some other breeds out there and there isn’t any differentiation with the meat the way you can sometimes find with beef.

Not every animal develop the same. These lamb chops are one of the best meat deals in the store- my opinion.
How would one best prepare those ? I am not a lamb eater but I am consider8ng learning more about lamb and how to prepare it.

They all have marbeling and there are some companies that do say “prime lamb”.

I love those little things. I like searing on my rytec then turning it off to reverse cook. Some chimichurri smeared on them with heavy sea salt. 🤌🤌
The first pack is more marbled, however it looks damaged either it’s old or it had a busted cryovac. Second pic isn’t marbled but looks very good
