



I changed my strategy, and went ahead and cooked them on the grates, then wrapped them, and finished on the grates.
I think it's really interesting how every tutorial talks about temp of the grill. I think it's great in theory, but the reality is that a lot of us don't have that setup that allows that. In this instance, I was at a vacation home so I couldn't monitor that.
To compensate, it's important to understand the burners and fire. I kept one burner on and the others off during this cook and it came out great!
