  1. 🥣 Lentil Soup ❤️ Recipe ⬇️

    📌 Soak about ½ cup red lentils (masoor dal) for 30–60 minutes.
    📌 In a kadhai, heat 1–2 tbsp olive oil. Add 1 medium onion (roughly chopped), 1 medium potato (chopped), 1 medium carrot (chopped), and 3–4 garlic pods. Fry for 1–2 minutes.
    📌 Add the soaked lentils and fry for another 2–3 minutes.
    📌 Season with salt to taste, ½–1 tsp curry powder, ¼ tsp black pepper, and 1 vegetable Maggi bouillon cube. Mix well.
    📌 Pour in about 2–2.5 cups water, cover, and cook until the lentils and vegetables are soft and fully cooked.
    📌 Switch off the flame and let it cool slightly.
    📌 Blend into a smooth, creamy puree.
    📌 Return to the pot, adjust consistency with a little water as per your preference, and reheat.
    📌 Garnish with a squeeze of lemon juice, fresh parsley, croutons, and a drizzle of chilli oil. Serve hot.
