First time postings here so any advice is appreciated. I bought a whole prime ribeye from Costco and cut/trimmed them up myself. First I salted them with kosher salt and let them sit on a rack for about 2 hours. Second I smoked them in my charcoal grill using hickory wood chips for about 45 mins until they hit an internal temp of 120, than I gave them a quick sear which brought them up to about 135ish internal. Lastly I let them rest for 10 mins with some regular butter on top and freshly ground black pepper until me and my fam completely devoured them haha. They came out very tender and with a nice smoky flavor, my only regret is not making some fresh roasted potatoes and asparagus to have with them
