    Personally, the yuzu mayo and the leek are a game changer on gyoza, expecially when they’re still hot. Fresh combo

    To everyone calling out “grilled”, this is a normal distinction made in Japanese. There is also 水餃子 – sui gyoza – “boiled gyoza.” The distinction made by OP is a [totally normal thing to do in Japanese](https://www.lettuceclub.net/recipe/dish/10684/) – even if it’s the “default”.

    Mushi – gyōza if steamed…. so 3 types of gyōza.
    – Yaki
    – Sui
    – Mushi.
