    I’ve found that you have to finish the meatloaf with some higher heat to get a good consistency.

    Smoked meatloaf is great. I like to top it with toasted poblanos and a spicy bbq sauce glaze.

    Next time try lining a meatloaf pan with some saran wrap and leveling it out so that you have an even thickness and then put it in the fridge for an hour or two until it firms up and then put it on your smoker or grill or whatever you’re doing
