Ingredients (2 servings)
2 chicken breasts
2 tbsp olive oil
Juice and zest of 1 lemon
1 garlic clove (minced or crushed)
Fresh rosemary or thyme (or dried)
Salt, pepper
100 g cherry tomatoes
½ cucumber
150 g plain yogurt (10% fat)
Juice of ½ lemon
Pinch of salt and pepper
1 tsp olive oil
Rosmarin, thyme
📌 Method
1. Marinate the chicken: mix olive oil, lemon juice + zest, garlic, salt, pepper and rosemary. Let sit for 20–30 minutes.
2. Grill the chicken breasts in a grill pan (or regular pan) until golden and fully cooked.
3. Chop the vegetables and mix into a simple salad.
4. Make the yogurt sauce by mixing yogurt, lemon juice, salt, pepper and (optional) olive oil or herbs.
5. Serve the grilled chicken with the salad and yogurt sauce on the side or drizzled on top.
