Ingredients (for 2 medium pizzas)
500 g (4 cups) all-purpose or 00 flour
325 ml (1 ⅓ cups) lukewarm water
7 g (2 tsp) dry yeast OR 15 g fresh yeast
1 tsp sugar
2 tsp salt
2 tbsp olive oil
300 g (1 ¼ cups) canned San Marzano tomatoes
250 g (9 oz) fresh mozzarella di bufala
Fresh basil leaves (handful)
2 tbsp extra virgin olive oil

Method
Prepare the dough: Mix yeast, sugar, and water. Combine with flour, salt, and olive oil. Knead until smooth. Let rise 1–2 hours.
Prepare sauce: Crush tomatoes, season with salt and olive oil.
Shape pizza: Stretch dough into a round base. Spread tomato sauce evenly.
Add toppings: Scatter mozzarella chunks and basil leaves. Drizzle olive oil.
Bake: Preheat oven to 250°C (480°F). Bake 7–10 min on a pizza stone or 12–15 min on a tray until crust is golden and cheese melts.
