In said recipe, can I use a one for one sub (170 grams) of panko breadcrumbs instead of white bread?

    Probably, though I would add a little extra buttermilk (like a T or so) since breadcrumbs are intended to be dry and crunchy where the goal of bread in meatballs is different. I would be worried that the panko won’t soften enough but it’s probably fine? Kind of a waste of panko though

    You can use basically any bread though, I’ve used whole wheat sandwich bread etc when that’s what I have
