    wowwww love the idea of a spring roll bowl, my local vietnamese place has a lemongrass tofu one i might take inspo from bc of this post. tysm and i hope they were so good!

    Chocolate Mousse
    Ingredients
    * Greek yogurt
    * Sugar-free Jell-O pudding mix
    * Semi-sweet or dark chocolate
    * Strawberries, thinly sliced

    Instructions
    Mix the pudding mix and Greek yogurt together in a bowl.
    Scoop into individual containers and refrigerate until lightly chilled.
    Pour melted chocolate over the top.
    Garnish with sliced strawberries.

    Deconstructed Fresh Rolls
    Ingredients
    * Shrimp
    * Rice vermicelli noodles
    * Lettuce, chopped
    * Green onion, thinly sliced
    * Carrot
    * Cucumber
    * Sesame seeds
    * Rice vinegar
    * Sesame oil
    * Salt and pepper
    Instructions:
    Cook vermicelli and rinse in cold water, splash a bit of rice vinegar and sesame oil onto them. Assemble veggies and set aside. Crisp up some shrimp with salt pepper and chilli. Assemble.

    Peanut Sauce
    Ingredients
    – Peanut butter
    – Soy sauce
    – Lime juice
    – Garlic, minced
    – Ginger, grated
    – Red chilies (fresh or dried), finely chopped
    – Honey

    Instructions:
    Combine ingredients to make sauce and keep separated from main dish for freshness.

    Stir fry sweet potato:
    – carrots
    – Sweet potatoes
    – Zucchini
    – Parsley chopped for topping
    – Quinoa

    Topped with a honey butter sauce
    – honey
    – Butter
    – Garlic powder
    – Garlic salt
    – Soya sauce

    Blueberry Cheese cake
    – sugar free vanilla pudding mix
    – cottage cheese
    – frozen wild blue berries.
    – chia seeds
    – pumpkin seeds
    Mix the pudding mix and cottage cheese together, top with blue berries and seeds of choice!
