    Looks beautiful. Not a fan of pairing Uni with wasabi, (but I’d still eat it). Everything else looks awesome.

    If I may be critical… Micro cuts are supposed to be micro. These are slashed way too deep. Too much of a good thing.
    Not trying to be an asshole. Still, it could be easily improved with zero extra work.
    I’m a culinary artist, sushi chef, nipo decendant, and pay close attention to the intricacies, if you will.
