    I’d try to render that inner fat a bit more and sear a bit harder, but a pretty looking ribeye 8/10 would eat

    Yeah agree, maybe a little higher heat for sear and a little less time. I would devour though.

    Looks amazing…. I’d smash that whole plate… If you want the fat to render more on a big piece of meat like that you can sous vide it first, wipe it dry and then sear it on high, over open flame (best option), or torch it (not really recommend for thicker cuts)…
