Ingredients:
• 2 -3 tablespoons of olive oil
• 1 medium onion, diced
• 1 carrot, peeled and diced
• 2 cups dried red lentils, rinsed
• 3 teaspoon rinsed rice.
• 1 teaspoon ground cumin
• 1 teaspoon turmeric
• 1 Liter of water (chicken, vegetable broth)
• Salt and pepper, to taste
• 1 lemon juice
Instruction:
1. Sauté the vegetables:
In a large pot, heat the olive oil over medium heat. Add the onion and carrots. Cook for 5–7 minutes until softened.
2. spices:
Stir and Cook for 1 minute until fragrant.
3. Add lentils, rice , and broth:
Stir to combine.
4. Simmer:
Bring to a boil, then reduce heat to low and cover. Simmer for 30–35 minutes, or until lentils are tender.
5. Blend .
6. Finish it with 1 lemon juice.
Enjoy hot, optionally with crusty bread.
