How’s the flavour with your mesquite charcoal? I’ve thought of using cheaper charcoal for Japanese grilling, but have always been worried that the charcoal’s smoke would overpower the subtler Japanese grill flavour, which mostly comes from the meat smoking itself in flare-ups of its own fat drippings, not smoke from the charcoal.
