Barbecue season is not over yet. Let’s make a delicious barbecue meal using Shaun spice mix. I used their chicken tikka as well as their tandoori masala spice mix and marinated chicken thighs and salmon so I could barbecue. You can use the spice mix on its own or add plain yogurt, lemon juice, and oil to your marinade. I also made dough for homemade naan. After marinating for 3 hours, I seared my chicken. Make sure to properly clean and oil your grill to avoid the chicken sticking. I also based with an oil and the spice mixture. I used foil to help me cook my well seasoned salmon and reheated the naan brushing garlic butter over it. I made a chopped salad inspired by Kachimber with cucumbers, tomatoes, and pickled onions and cilantro. Everything came together real quickly because of the help of the spice mixes and it was the perfect rooftop dinner at sunset.
