I didnโ€™t take a picture after but the 2nd picture I did let them prove again for a couple hours after. I did two proves totaling 4 hours, tho the recipe doesnโ€™t ask for that. Recipe in comments!

    Dough:
    875 g all-purpose flour

    75 g sugar

    80 g sourdough starter (optional, for flavor) or 7.5 g yeast

    370 g milk (slightly warmed, 38โ€“40 ยฐC / 100โ€“105 ยฐF)

    1 ยฝ eggs (1 large + half beaten, ~75 g total)

    16 g salt

    175 g butter (softened)

    Peach Glaze:

    600 g powdered sugar

    250 g fresh peaches (purรฉed or very finely chopped and pressed for juice)

    Lemon juice to taste (start with 1โ€“2 tsp to brighten)

    Method:

    1. Mix yeast, warm milk, and sugar. Let sit 5โ€“10 min until foamy.

    2. Add eggs, flour, salt, and sourdough starter (if using). Mix until shaggy.

    3. Knead in butter gradually until smooth dough forms (10โ€“15 min by hand, 7โ€“10 min in mixer).

    4. Cover and let rise 1โ€“2 hrs until doubled.

    5. Roll dough to 1.5 cm thick, cut 9 cm circles with holes in the center.

    6. Place on parchment, cover, and let rise until puffy (30โ€“45 min).

    7. Fry in 175 ยฐC / 350 ยฐF oil until golden brown, about 1โ€“2 min per side. Drain on racks.

    8. Dip warm donuts into peach glaze, let set slightly, enjoy while still warm.

    those sound amazing i just made some apple cider donuts last week and they were a hit canโ€™t wait to try something with peaches now love the idea of letting them prove longer makes them so fluffy right
