Bought a Prime NY strip roast, trimmed the fat and cut it into 2” NY Strips. Cubed the fat trimmings and rendered the tallow at 250 in a saucepan on oven for ~3h.

Steaks in the bath at 130 x 2h.

Ice bath, dried w 100 paper towels.

Coffee-hot chocolate rub.

Covered in the tallow.

Seared on a grill.

    That is beautiful. I am familiar, and use, coffee based rubs. However, I never heard of a “hot chocolate “ rub. Can you share info on it? Thanks
