Crispy Garlic Parmesan Shrimp

Ingredients:
1 lb raw shrimp (peeled, deveined, tail off)
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
Salt & pepper to taste
½ cup freshly grated Parmesan cheese
½ cup Panko bread crumbs

For the Garlic Butter:
3 tbsp butter
3 garlic cloves, minced
1 tbsp chopped fresh parsley
1 tbsp lemon juice, plus more for garnish

Directions:
1. Preheat oven to 400°F.
2. In a bowl, combine the shrimp with olive oil, paprika, garlic powder, salt, pepper, Parmesan cheese, and Panko bread crumbs and toss well.
3. Lay shrimp out on a parchment or foil lined baking sheet in a single layer (do not crowd).
4. Bake for 10-12 minutes until the shrimp are golden, crispy and cooked through.
5. In a small pan, melt the butter over med/low heat. Add the minced garlic and cook until fragrant (about 30 seconds). Stir in parsley and lemon juice.
6. Pour butter sauce over cooked shrimp and mix well. Garnish with extra lemon juice, Parmesan cheese, and parsley. Serve immediately.
