Ingredients
Chicken mince – 1 kg
Onions – 4 small
Green bell pepper – 1
Red bell pepper – 1
Fresh coriander – a handful
Cumin powder – 1 tablespoon
Paprika powder – 1 tablespoon
Coriander powder – 1 tablespoon
Salt – to taste
Sumac – 1 tablespoon
Garlic powder – 1 tablespoon
Method
Step 1: Prepare the vegetables
Peel the onions and cut them into quarters.
De-seed the green and red bell peppers, then roughly chop them.
In a chopper, finely chop the onions and peppers, then drain out excess water to prevent the kebabs from becoming soggy.
Step 2: Mix the kebab mixture
In a large mixing bowl, add the chicken mince, chopped vegetables, fresh coriander, and all the spices.
Mix well until everything is evenly combined.
Step 3: Shape the kebabs
For oven-baked kebabs:
Grease a baking tray and spread the kebab mixture evenly.
Use a flat spatula or knife to divide the mixture into long kebab shapes.
Make shallow indents across the kebabs to help them cook evenly.
For stovetop kebabs:
Shape the mixture into long kebabs by hand.
Heat a little oil in a pan and shallow-fry until golden brown and cooked through.
Step 4: Cooking instructions
Oven method:
Preheat oven to 250°C.
Bake for 20 minutes on the lower rack with the fan on.
Then bake for another 20 minutes using both upper and lower heating rods with the oven door slightly open.
(Cooking time may vary depending on your oven.)
Stovetop method:
Shallow fry the shaped kebabs in a frying pan until golden and fully cooked.
