Creamy roasted garlic mashed potatoes meet a bold Colombian twist – comfort food with a Latin flair you’ve never tasted before!
You know, legend has it if you roast garlic just right, you can seduce any Colombian. That’s fake news, Shy. But I did take the whole container home last time. So, what we’re going to do with this beautiful piece of garlic is Valentina, who is our expert at roasting garlic, is going to roast this sucker for us. Would you do the honors? Yes, of course. Excellent. Just a little drizzle. A little bit so that the cloves all have some. You can rub it with your finger, too. Okay. Oh, a little bit more. I put a little more. Be generous. Perfect. Now you’re cooking with Crisco. [Music] Is that [Music] excellente? Let’s roast that sucker. While that’s roasting, why don’t I grate some cheese? What we’re doing here today is we’re making roasted garlic mashed potatoes except we’re adding a Colombian touch to it. Queso cost. Queso Cost. This is a traditional staple in Colombian food, right? And this is the real thing. And I’m going to be grating at a half a cup. Maybe that’s more than half a cup. I’m going to add some more cuz I love this cheese so much. Actually, me too. Folks at home, if you don’t like cheese, don’t use cheese. If you love it like we do, be generous. And we will use this later. And Val, I’m going to let you do the honors. We got about 2 lbs. I I think Yukon Gold, if you can get them, would be better for this. It’ll be a creamier mashed potato, but here in Panama, I can only get rusts, so this will have to do. A little more starchy, but that’s not a bad thing. I’m going to salt the water a little bit cuz as legend has it, salted water comes to a boil a little bit faster. It’s starting to boil any day now. Any day. Yep. Now we’re going to take our boiling water and we’re going to put our sliced and peeled potatoes. And while that’s going on, I’m going to heat up some heavy cream, some whole milk, and some butter. I love the cream meal. Oh, here. I got another one. You only live once. Uh, the butter. Uh, the butter. Yes. And my spoon or something to stir this with. I stole your spoon. That’s unforgivable. Uh, let me grab the other uh butter. Okay. A little restaurant secret. When they make mashed potatoes at restaurants, it’s always rich and creamy cuz they use a lot of butter. So, we’re going to be doing the same today. [Music] We’ve got our potatoes boiling. We’ve got our cream and butter mixture cooking over there. And we’re roasting garlic 400° F for about 30 minutes or so. Or until it smells like heaven or like your Italian grandmother moved in next door. It smells good. Smells like Italy in here. It’s almost ready. That’s right. We’re in the home stretch. Okay. Perfect. Perfect mashing texture. It’s ready. She’s ready. Okay, Val, you’re the official masher. Let me get you your garlic and the creamy. Oh, that smells heavenly. Yeah. Wa! Oh, delicious. So, we’ll let that cool so you don’t burn yourself when you squeeze them out. We have to add the You need liquid. I didn’t think you were ready yet, but I guess we’re ready. [Music] While it’s hot, I’ll add some of your delicious Colombian cheese. I love cheese and I love garlic. We’ll add the garlic shortly when I can handle it. It’s fresh out of the oven. You have to mash until your parents get tired or until a gentleman offer to do it for you. Where can we find the gentleman? [Music] We can add some garlic, I’m sure. Ah, yes. With the garlic. Oh. Now it looks better. Yeah, it just needs a little effort. Want me to take over, please? No hesitation. It’s creamy. I guess [Music] perfect. We can serve it in this. That’s a mighty big serving of mashed potatoes. M. Oh my god. Delicious. Just the right balance of everything. I love it. You have to try to eat this mashed potato. Delicious. Kicked up a notch. Colombian style. And there you have it. roasted garlic with mashed potatoes, cream, milk, and a lot of butter to make it very rich. And we’ve of course don’t want to forget queso cost, which is Colombian cheese. Not too salty, not too strong. It’s actually mild enough that it goes with mashed potatoes beautifully.
