So, I’ve been making this chickpea salad for dinner for the past week or so now. It’s the perfect spoonable salad situation for when it’s aggressively hot out. The base is chickpeas, obviously, cherry tomatoes, and pearl couscous, which I’ve been loving cooking like pasta because it’s easier. It doesn’t stick to the bottom of the pan. And then rinsing the couscous when it’s done cooking also prevents it from clumping and just sticking together. And then the two main flavor agents for this is the spiced oil and pomegranate molasses, which adds such a fun dynamic flavor to this. Plus, since there isn’t any lemon juice or obvious acidic ingredient in this, it relies on the pomegranate molasses and stomach for some tang.
