Balsamic Glazed Carrots ๐Ÿฅ•

This is day 13 of 30! During the Autumn months, we tend to have more visitors in the house. This means large group dinners with lots of side dishes! These honey and balsamic glazed roasted carrots are so delicious and are such a simple side dish that everyone will love ๐Ÿ˜๐Ÿ™Œ๐Ÿป

Ingredients:
๐Ÿ‚As many carrots as you need to feed your party (I usually do two carrots per person!)
๐Ÿ‚1 tbsp olive oil
๐Ÿ‚2 tbsp balsamic vinegar
๐Ÿ‚2 tbsp runny honey
๐Ÿ‚2 tsp dried or fresh thyme
๐Ÿ‚1 tsp chopped garlic
๐Ÿ‚salt and pepper to taste

Toppings:
๐Ÿ‚more balsamic glaze to drizzle (optional)
๐Ÿ‚soft goats cheese (optional)
๐Ÿ‚fresh chopped sage
๐Ÿ‚fresh chopped parsley

Add the olive oil, balsamic vinegar, honey, thyme, salt and pepper and garlic to a large bowl and mix well. Chop your carrots into batons and toss in the sauce until well coated.

Spread the carrots out on a baking tray and cook at 180 degrees celsius for 25-35 minutes until they have a sticky outside. Serve with an extra drizzle of balsamic vinegar, soft goats cheese and some chopped fresh herbs! ๐Ÿฝ๏ธ
