This is congee, made with vegetable broth and shiitake. Popped a couple sardines on top and enjoyed a warm and filling meal, perfect for breakfast or lunch.
Congee recipe I used. I did use the paste version of lemongrass and ginger as I couldn't find fresh at the store. The pastes contain whey, making mine 'vegetarian' and not 'vegan'. But I followed everything else to the letter; when it was about 75% done I gave the pot a good minute with a whisk and that made it a lovely smooth texture. It makes four 2.25 cup servings from just one cup of Jasmine rice, freezer friendly too. Kept me warm and full long past lunchtime.
