Intrigued. Can you give a bit more detail on the cut(s) you get and the savings? You’re paying for a lot of bone right? (I guess I could also learn to make my own stock/broth/ whatever…)

Highly recommend you wait until you bring it back home to start making the steaks .

At my Costco, the primal is $2.50 less per pound. Once you drain the juice out, and trim it, you’re losing some weight but still saving maybe $1.25-1.50/lb.
Worth it? I dunno. It’s a big investment to drop a few hundos on a roast. I think the biggest advantage is custom cutting it as you wish. Maybe a 3 lb roast, a few thick cuts, and a few thin cuts, etc.

Make sure to save the trimmings and melt into tallow! Get all of your money out of it. I recently started doing this and I’m kicking myself for not doing it my whole life. It’s super easy to do

They were trying to sell a whole package of tenderloin for $5 or 10 off.
I checked the price per pound and it was the same.
If I’m not saving any money (or very little) and losing trimmings I’m looking at them sliced up and picking and choosing the best ones.

Please be using freezer paper for this process or your steaks will be freezer burnt to hell very quickly

I used to do this and stopped. Wasn’t worth the effort. If you consider your time, you’re not saving anything plus you can’t see the marbling.

Support local farms. Support local butchers and meat markets.
Even if the quality of their steaks is fine (i highly doubt that). We constantly complain about these giant mega companies fucking us over in every walk of life. Then you brag about going to them.
I PROMISE YOU there is a local place owned by people in your community that you can buy your steaks from.
Be better than costco.
