Delicious Kerala-Style Tomato Curry Recipe.

Ingredients:
– 4 tomatoes, cut into pieces
– 1 onion, sliced
– 1-2 green chilies, cut into pieces
– A few curry leaves
– Salt, to taste
– 1/2 teaspoon turmeric powder
– 1 tablespoon grated coconut
– 1-2 garlic cloves (optional)
– 1/2 teaspoon cumin seeds
– Small onions (shallots), for the paste
– Coconut oil, for tempering
– Mustard seeds, for tempering
– Dry red chilies, for tempering
– Curry leaves, for garnish

Instructions:
1. In a pressure cooker, combine the tomato pieces, sliced onion, green chilies, curry leaves, salt, and turmeric powder. Add water and close the lid. Cook until one whistle.
2. In a mixer jar, blend the grated coconut, garlic, green chilies, small onions, and cumin seeds into a semi-paste form.
3. Open the pressure cooker and mix in the coconut paste.
4. For tempering, heat coconut oil in a kadai. Add mustard seeds and let them splutter. Add dry red chilies, small onions, and curry leaves. Sauté until golden brown.
5. Add the tempering to the curry and mix well.

Tips:
– Adjust the amount of chilies according to your desired spice level.
– Use fresh coconut for the best flavor.
– You can also add a splash of curry leaves and coconut milk for extra flavor and creaminess.
