When you cook it, the proteins and sugars in it toast and that’s where that browned butter flavor comes from.

Someone made a cake that was an “epic fail”to a party. It looked like a delicious chocolate cake made from scratch, but it wasn’t chocolate. This had to be explained over and over again when someone asked for a slice of the chocolate cake. It was a box yellow cake mix that was made with only one change—bacon fat was used in place of the oil. The bacon fat changed the color, texture, and flavor slightly. It was one of the best slices of cake I’ve ever had.

I am all for eating meat. however when I was young it was discovered that eating meat products made my stomach and intestines hurt. So for the last 30+ years I have not eaten meat.
I ordered a grilled cheese once at a restaurant that used the bacon fat as the butter.
For the next several hours it felt like I swallowed a cheese grater that was shredding apart my insides. 0/10 would recommend.

I keep a jar of butter mixed with bacon fat just for grilled cheese. The flavor is great and it is so spreadable! Edit to add … I still get buttery flavor but with a little smokiness too. It is great.
