His culinary journey has taken him across major destinations including Mumbai, Goa, Bengaluru, Hyderabad, and Kolkata. Over the years, he has crafted authentic Sicilian specialities for a premium rooftop restaurant, curated Ligurian-inspired menus at a boutique luxury resort, and reimagined Italian classics in fine-dining settings. His approach prioritises sustainability and local sourcing, bringing honesty and freshness to every plate.
A graduate of the Institute of Advanced Management in Kolkata, Chef Nilanjan is admired for his creativity, strong leadership skills, and unwavering commitment to delivering memorable guest experiences. His culinary philosophy is rooted in rustic Italian flavours enhanced with elegant presentation, appealing to both purists and those seeking inventive variations.
