Welcome back to Chickpea Friday where I share some fresh inspiration for that can of chickpeas in your pantry. All right, so this is a roasted broccoli Caesar salad with crispy chickpeas. So, it looks like there’s a lot going on in the salad, but it’s actually really easy. You’re going to roast the broccoli and chickpeas. While that’s all roasting, you’re going to stir together your tahini Caesar dressing, which is so good, you’ll want to eat it with a spoon, so you might want to make extra. Then, you’ll just toss together that tender roasted broccoli, the crispy chickpeas, the Caesar, and a bunch of parmesan.
