I finally took the plunge and tried to do pulled pork overnight with no intervention. Lit the egg at 10pm and let the temp stabilize at 250 (took about an hour). Then put the egg genius on and went to bed. When I woke up around 6:30 the pork had just hit the 160 degree stall, so I wrapped in butcher paper and then increased the temp to 275. It took a total of 15.5 hours, but man did it turn out great. I was surprised that I didn’t notice a big difference from not spraying. I do fill a drip pan with hot water before putting the pork on but it turned out beautifully moist. It was my first time using the Meat Church Texas Sugar rub and adding some additional salt 12 hours prior to cooking.
