Looking around for lower calorie pie crust recipes I found one for “all purpose quick dough” that only used self rising flour and Greek yogurt. The result was surprisingly good!

A quarter of the whole thing works out to 424 calories, 28g protein, and 11.5g fat. I might try using bread flour and adding chicken sausage next time to up the protein. But I had a ton of veggies I needed to use so I just threw them all in. I also used 3 whole eggs and 3 egg whites, plus 1/2c whole milk since I had it on hand. A few calories could be shaved off switching to a lower fat milk.

Obviously it’s not as delicious as a quiche made with butter, cream, and cheese but I found it to be pretty tasty and I’m eager to experiment with it. If anyone wants the full recipe I’ll comment it below!
