I had this fluffy tamago at Morihiro in LA and it was mindblowing. I cannot find any recipes that look similar at all.

Any ideas?

    ….thats egg? Not cake? I swear its cake. There is no way its just egg there with that texture….

    if its just egg then its almost certainly a soufle based type. So they probably beat the eggwhites into a foam and then add the yolks in and bake it. Or it may just be eggwhite only given the lightness of that colour.
