First time trying low and slow, and finishing with hot and fast.

Had beef cheeks and lamp roast on for 5 hours at about 150 Celsius, finished it off in foil trays to make barbacoa. Then smoked a salmon flank for 30 mins and did burgers and sausages.

Sides: grilled veggies on the weber; asparagus, tenderstem & sweet peppers – combined with a tahini sauce and pomegranates, & potato salad

    Never thought of putting herbs on the coals also, going to definitely give it a go next time

    I have a Weber gasser, WSM, and kettle. I use the kettle way more than either. It’s my favorite grill and does everything I want to do. I even prefer to smoke on it.
