Red Pepper Aioli
INGREDIENTS:
1 roasted red bell pepper, homemade or jarred
½ cup mayonnaise
1-2 cloves garlic minced, depending on how garlicky you like it
pinch salt and pepper to taste

DIRECTIONS:
Transfer 1 roasted red bell pepper (skins and seeds discarded) to a mini prep food processor. Add ½ cup mayonnaise and 1-2 cloves garlic.

Pulse until the pepper is thoroughly blended into the mayonnaise, scraping the sides and pulsing again if necessary.

Season with a pinch of salt and pepper to taste.

Transfer the red pepper dip to an airtight container and refrigerate for several hours or overnight for the flavors to marry and the aioli to thicken.

Today, we’re making red pepper aioli You can use this as a dip, a sauce, or even as a sandwich spread. We start with roasted bell peppers you can use store-bought or make them yourself for that– Roast them at 400°F for 30 minutes. Then put them in a covered bowl to rest until they’re cool and you can handle them. Then you remove the skin Just peel it off–it comes off easily and you’re just going to separate the pepper and take out the seeds and the stem and we’re just going to use the soft flesh. Add the roasted peppers to a food processor along with some garlic and mayonnaise and blend it up. Just until it’s nice and smooth– and then we season with a little salt and pepper. Give it another whiz in the food processor. and that’s pretty much it. Pour it into a jar –you’re going to want to refrigerate it so the aioli can thicken. And once it does, this is what it looks like. You can use this as a creamy spread for sandwiches, as a dip, even as a sauce on fish or chicken It has a smoky-sweet flavor you’re gonna love. Enjoy!
