CUCUMBER SALAD
2 Persian cucumbers
2 tsp soy sauce
1 tsp sesame oil
1 tsp rice vinegar
1 tsp
1 tsp chili crunch or chili crunch oil
CHICKEN SHAWARMA BOWLS
1lb chicken tenders
1/2 plain Greek yogurt
1/2 lemon juiced
1 tbs olive oil
1 tbs tomato paste
3 cloves crushed garlic
Seasoning mix (use half for chicken half for potatoes): 2 tsp salt, 1 tsp pepper, garlic powder, onion powder, paprika, all spice, turmeric
Wedge 2 golden potatoes & season with olive oil and other half of seasoning mix
Bake potatoes at 400 F for 40 minutes. Then push to the side and add chicken tenders and bake for another 15 min or until cooked thru. Broil in high for 3-5 minutes if you want an extra crisp!
For the Mediterranean salad, mix together tomato, cucumbers, avocado, feta cheese, Kalamata olives and red onion together. Dress ir with honey Dijon vinaigrette (recipe ⬇️)
HONEY DIJON VINAIGRETTE
1/2 cup olive oil
1/3 cup white wine vinegar
1 tbs honey
1 tbs Dijon mustard
1 tbs lemon juice
2 cloves garlic
Punch of salt & pepper
1/2 tsp Italian seasoning
Blend together
(Keep in fridge for up to 10 days!)

LOADED SWEET BAKED POTATOES

•3 large sweet potatoes
•3-4 tbs olive or avocado oil
•Seasoning mix: 1 tsp each salt, pepper, garlic powder, paprika, cayenne pepper
•1 lb ground beef (sub with black beans, ground turkey/chicken)
•1 bag frozen fire roasted peppers and onions (from Trader Joe’s)- sub with 1/2 red pepper, 1/2 green pepper and 1/2 onion sliced
•3 minced garlic cloves
•1 tbs tomato paste
•1 tsp Worcestershire sauce
•1 cup shredded cheese of choice (I used Monterey Jack and cheddar
•1 Roma tomato diced
•1 jalapeño sliced
Sour cream and lime wedges to serve
1. Preheat oven to 400 F. Rinse potatoes and dry well. Cut sweet potatoes long way and season both sides with 1-2 tbs of oil and half of seasoning mixture. Place cut side down on lined baking tray and bake for 35-45 min or until fork tender
2. In a pan, heat up remainder 2 tbs of oil and ground up beef. Once majority has cooked, add in frozen peppers, garlic, tomato paste, and W sauce. Saute on medium heat for another 3-5 minutes. Turn off heat and sprinkle in 1/2 cup of the shredded cheese
3. Once potatoes are done, add butter to each potato and mash with a fork. Remove some of the potato mash if needed. Create a well in the potato with the back of a spoon and scoop on the ground beef mixture.
4. Top with remainder cheese, diced tomatoes, and sliced jalapeño. Bake for another 8 min at same temp (400F) and then broil on the top rack on high for 2 min at the end.
5. Drizzle on some sour cream and a squeeze of lime! ❤️🔥
Welcome back. For this week’s video, I’m going to do a week of dinners. I love watching videos like this and getting ideas and inspiration for different recipes. As a mom to a 4-month-old, sometimes it’s really hard to find time to make dinner. So, all these recipes are going to be quick, they’re going to be easy, and of course, delicious. Bryson and I usually alternate who makes dinner during the week. But this week, I’m going to be making dinner every single night just so I can show you what recipes I’m making. Let’s go. To start off the week, I’m going to be making beef bogi bowls. I got this already made from the frozen section in Trader Joe’s. It’s so delicious and just makes it so convenient. I’m also going to sauté it with some broccoli. [Music] While that’s cooking, I’m going to start off with the sides. I’m going to do a smashed cucumber side dish. Going to cut the ends off of my cucumber. Just going to smash it like this. And then I’m going to cut it down the middle and chop it in big cheese. Soy sauce, sesame oil, rice vinegar. Then you can also add some chili oil, but I’m just going to use this chili crunch seasoning. Tiny pinch of salt. Let that sit on the side and marinate. Going to make a shredded carrot salad. Start by peeling the outer skin. Use your peeler to make long ribbons. I keep the carrot simple with a squeeze of lemon juice and some olive oil. This is such a good side dish to any meal. Just the perfect cold, crunchy side. Add some Sriracha and let it caramelize. Add the whites of the green onions. Time to plate this up. Steamed white rice as the base and the beef, cucumbers, carrots. But wait, there’s more. Fried egg on top. The greens of the green onion. There’s a little spicy mayo. Everything but the bagel seasoning. Monday’s dinner is served. Taste test. Oh my god. Delicious. Today is Tuesday and I’m going to be making chicken shawad muffles. Because we had rice yesterday, I’m going to do with some roasted potatoes instead of rice. Chicken needs time to marinate for at least a couple hours or even better overnight. So, I’m going to start marinating my chicken. I’ll have the entire recipe in the caption below. chicken tenders or chicken thighs, Greek yogurt. Greek yogurt is amazing for marinating chicken. It keeps it really moist, lemon, olive oil, crushed garlic, and a seasoning mix. I’m going to use half of the chicken and half for the potatoes, tomato paste or red pepper paste. Done. Let this marinate in the fridge for a minimum of 1 hour. You can also let it marinate overnight. In the meantime, I’m going to get started on some potato wedges. Two golden potatoes. Love these large bacon dishes. This is such a Middle Eastern thing. You can find these at any Arab market. Olive oil and the other half of the seasoning mixture. Although this is going to be a one pan dish, the potatoes take a lot longer to cook than the chicken. I’m going to start roasting these potatoes at 400° F for about 40 minutes. After that, add the chicken and we’ll let it continue cooking. Now for a Mediterranean salad. Added some colam olives and feta cheese. And now my homemade honey dejon vinegrett. Pinch of salt. Take the potatoes out of the oven. They’re about 3/4 of the way cooked. Push them to the side. And now I’m going to add the chicken. I have these parchment paper liners from my air fryer just to keep it separate because the chicken is raw. Not going to like pour it in cuz I don’t want all the extra yogurt. By the way, I’m pumping. So, ignore the noise. And try to spread out the chicken as much as I can. Also going to add some pieces of red onion. Roasting chicken with red onions or just onions in general just gives it so much moisture and also flavor. This is how it’s looking. And this is going to go back in the oven. Time to plate. [Music] Some tulum on the side, which is like a garlic spread. And some Greek yogurt. Looks so good. Taste test. Chicken first and some garlic spread. [Music] Wow. So good. Oh, tonight’s tonight’s dinner is pretty usual for us. This is ground turkey with peppers over some steamed white rice. I topped it with a fried egg and some Sriracha as well. Bryson made this the other day. We have this literally once a week and I have the recipe in my Fit with Sis Tik Tok playlist. I also made a high protein chicken salad and I also will have this recipe on fit with this. We don’t make dinner every single night, so there’s always a couple nights a week where we have leftovers. So good. The chef, today’s dinner is going to be super simple and straight to the point. I’m going to be making chicken Caesar salad wraps. I’m going to keep it simple and use pre-made Caesar salad instead of making my own. This is my favorite. It’s from Taylor Farms, and I like it how it they um shred the lettuce. I feel like the texture is just a lot better. A bag of that I’m just going to mix together. And then I have leftover chicken tender cutlets that my mom made. Uh she just gave them to me cuz she had a bunch of them. And these are raw already, but they’re already breaded and everything. So, I have to pan sear these. Six tenders. So, I’m going to pan sear all of these. And some tortilla and optional some honey mustard. I’m going to add some on mine. And some tomatoes. She breaded the chicken tenders and pinker bread crumbs. And then seasoned them with salt and pepper. And I think she also sprinkled some chopped pistachios on there as well for extra crunch. You can just season them however you want, but I know this gives it a nice little crust. This is such an easy weekday dinner, especially if you have kids or if you’re in a rush. Just something that you can put together in less than 15 minutes and doesn’t take a lot of ingredients and a lot of prep or cook time. [Music] Moment of truth. [Music] Look at that. That looks insane. My favorite drink of choice besides water, of course, Trader Joe’s apple juice and Trader Joe’s lemonade. Now, on their own, they’re incredible. But together, insane. I first had this when I was pregnant, and I was like, how have I never thought about this before? Apple juice and lemonade. It’s the perfect perfect juice combo. A cup of ice, of course. Get my cute straw. Love this one cuz the only ingredient is apples. So, it’s just no added sugar. It’s just so delicious. I’m going to add maybe half. And then this one does have some cane sugar in it, but the only ingredients are water, lemon juice, and the sugar. So, it doesn’t have any added preservatives or BS that you see in other juices. I call this the CC Palmer. Why did no one ever think about apple juice and lemonade together? It’s the best combo. Every time. Every time. Little bit of It’s perfect. Yep. I promise should not have to be that overly complicated. It can be something as simple as this. Storebought ingredients, quick, easy, to the point, and delicious. Today for dinner, I’ll be making one of my absolute favorite recipes. I actually improvised it when I was pregnant, and has easily become one of our go-to meals, especially my favorite for meal prepping for work. It’s so delicious. It’s so easy to make, and I will say over 3 million of you loved it as well on Tik Tok. Tonight’s dinner is loaded sweet baked potatoes. [Music] dissolve olive oil. And for the seasoning mixture, I’m going to use half of the potatoes and half for the ground beef. Use your hands to rub it in so the olive oil and the seasonings cover both sides. Place the potatoes cut side down in the oven at 400° F for about 35 to 45 minutes or until they become fork tender. Ground beef. Now that most of the meat is ground, I’m going to add these fire roasted peppers and onions from Trader Joe’s. However, I only have about a third of the bag left from the freezer. I don’t have enough. Usually, I add the full bag. Since I have it, I’m also going to add some fire frozen fire roasted corn to make up for the low amount of peppers and onions. Now, for some more flavor, crushed garlic, tomato paste, W sauce, and the remainder of the seasonings. Alia is 4 months old and recently found her voice, so you might hear her just screaming for fun in the background. how caramelized and crispy they get. Scoop out some of the potato and save it for later. She literally loves hearing her own voice. Use the back of the scoop spoon to kind of smooth out the potatoes and make like a little well to hold the ground beef. Sliver of butter. Then top each potato with the ground beef mixture. some shredded cheese. Mhm. Exactly. Diced up some tomatoes. I sliced some fresh jalapeno. And I also chopped some cilantro. Going to add the tomato first. And the sliced jalapeno. This is how they’re looking. Bake for another 10 minutes at 400°. I might even boil it for the last couple minutes just to get a nice crust. A drizzle of crema or sour cream. Some chopped cilantro. Look how gorgeous this is. Let’s do a taste test. Wow. It has the perfect kick from the cayenne pepper. M one of my favorite dinners and so easy to meal
