do you think I can count risoto as pasta for my pasta series because this creamy pumpkin risoto was just calling my name and by the time you finish this video it’ll be calling yours too the ingredients for this one are super cheap and super simple you just need onion garlic stock pumpkin or butternut squash alboro rice and cheese finally dice your onion and garlic then chop your pumpkin into small cubes to a shallow cast iron skillet add a little bit of oil then sauté your onion add in your garlic and once fragrant add in your pumpkin then add about a teaspoon of salt 1/4 of a cup of water and cover for about 8 minutes the water should have evaporated and the Pumpkin should be nice and soft to mash once the pumpkin is mashed up add in a cup of aoro rice mix this in with the pumpkin then add in a cup of stock add nutmeg saged salt and pepper and another cup of stock then stir and cover for about 15 minutes make sure to check on it because it might dry out and if it does just add more stock and keep stirring add a little bit of Parmesan cheese and stir it through to get this creamy texture
