🍚 Classic Arancini (Sicilian Rice Balls)

Ingredients:

3 cups cooked risotto (or plain arborio rice, cooled)

1 cup mozzarella cheese (cubed, or shredded)

½ cup grated Parmesan cheese

2 eggs (1 for rice mixture, 1 for breading)

1 cup all-purpose flour

1½ cups breadcrumbs

Oil for frying (vegetable, canola, or peanut oil)

Optional Filling (traditional ragu style):

½ cup ground beef or pork

½ cup peas

½ cup tomato sauce

Salt & pepper to taste

Instructions:

1. Make the Rice Base

If using risotto, make sure it’s well chilled so it’s easier to shape.

Mix in Parmesan cheese and 1 beaten egg for binding.

2. Prepare the Filling (Optional)

Sauté ground meat, peas, and tomato sauce. Cook until thickened. Let cool.

3. Shape the Arancini

Take a handful of rice, flatten into your palm.

Place a cube of mozzarella or a spoon of meat filling in the center.

Close rice around the filling, forming a tight ball (about the size of a golf ball).

4. Breading

Roll each ball in flour, dip in beaten egg, then coat with breadcrumbs.

5. Fry

Heat oil to 350°F (175°C).
