For the homemade teriyaki sauce, prepare 1/2 cup of soy sauce, 1/4 cup of mirin, and 2 tablespoons each of sake and brown sugar. Add one tablespoon of grated fresh ginger and two cloves of minced garlic, plus one teaspoon of sesame oil. This combination creates a rich aromatic flavor base. Begin by combining all your marinade ingredients in a medium bowl. Whisk together the soy sauce, mirin, sake, brown sugar, grated ginger, minced garlic, and sesame oil until well integrated. Ensure the brown sugar completely dissolves, creating a unified, luscious sauce. Next, gently pat your salmon fililelets dry on both sides using paper towels. This step is key for a beautiful sear.
