I bought a flat iron steak from butcher at farmers market Sunday and have no idea what they gave me

    You have some offal there. Most likely kidney. Most certainly not a flat iron steak.

    Serious question, can you go back to the butchers? I know it’s been a few days, but it’s not unreasonable to not have seen it in that time. This is obviously not a flat iron steak. I had to check the sub when I saw the thumbnail. lol

    Cow kidney, grill them and make what we call Asian crack sauce. So good with a side of fresh jasmine rice

    There’s some nice suet in there too. Render that down and you can make a good boiled pudding.

  9. Yep, it’s a kidney. Someone got your steak and is now very disappointed. Look up a good recipe online and enjoy it. The butcher won’t want it back. Warning: The smell is going to be strong.

    Kidney is delicious. Cut into medium chunks and pan fry on high heat with butter and Worcestershire sauce. Cut all the white stuff off first.

    Beef kidney and a good looking one. Definitely an acquired taste imo but can be very delicious. I would slice and soak in milk to remove as much peepee flavor as possible. Then sear in lots of fat (ideally beef tallow or butter) and sauce with flavorful things that can do battle with piss flavor (wine, preserves, rosemary, mustard, onions, hot pepper or lots of black pepper).

    Be sure to remove the white fat and gristle in the center, and render that fat out to sear them in. Kidney fat is revered for its clean flavor and high melting point which makes for very flaky delicious pastries.

    Ahh beautiful kidney! Cut out all the fatty parts, give it a rinse. Chop it up with garlic and cilantro. Fry it in a pan with olive oil salt pepper cumin and paprika!
