I took the advice to let the steaks rest at room temperature longer, and I’m really happy with how they turned out. Tasted delicious!

I still feel like I could’ve done a better job rendering the fat and minimizing the grey band. I’d appreciate more feedback so I can improve in those areas.

    The one on the left is a bit on the rare side.

    But also, you’ve sliced everything up and laid it out on the cutting board to get cold. I can even tell how long it’s been sitting out by the red surface oxidation creeping in. Your fat is already chewy by this point.

    Steak tastes 10x better if you leave it whole and cut it fresh as you eat it. Slicing it up and laying it out like this is done for Instagram, but it honestly ruins the eating experience, in my opinion.

    Looks good to me. Some people on here just turn the stove on and threaten the steak with a skillet and call it done….cooking the steak with nothing more than a heated argument 😂
