Today we are cooking one of Italy’s oldest soups, minestrroni. First we have to prepare our vegetables [Music] and cut the vegetables, making sure you peel and wash the vegetables you use. It is important to not crosscontaminate your workspace. Wash the parsley and finely chop. Break the pasta into smaller pieces. Remember, we want each bite to have all the flavors and textures. Cut your bacon last to minimize crosscontamination in these early stages of cooking. [Music] Saute onions, leaks, and garlic. Then add vegetables. Add the tomato paste. Add stock, making sure it is covering all the vegetables in the pot. Meanwhile, we can cook our bacon in a pan. Shifen the basil. I find rolling up smaller, manageable sized helps. Add to cooked bacon and beans. Then mix. Keep warm to add on top of our minestrroni. We can now add our starches, rice, pasta, and potato. Get our warm bowl ready. Ladle in the soup and put the bacon bean mix on top. Add cheese. Points to remember when you add the starches to stir because the starches will thicken the soup and it could burn on the bottom.
