    Those are the good ones I hate when they have the larger lip around them you can never get them out of steam table without burning yourself or getting water everywhere.

    Same! I attended a wedding last week as a guest for once instead of as the Chef, and the Caterer was pulling brand new hotel pans out, I was so jealous about the shiny but also a little nervous about why their pans weren’t used. The food was pretty good, but not great, but I saw Reser’s Potato Salad tubs in the trash, so…
