Its choice. It’ll taste great but I’d ask the butcher if they have prime brisket. Marginally more expensive for sure but is delicious.
Again you can’t go wrong with a solid choice cut so if they don’t have any prime or is a bit too pricey, go choice.

Around 5/lb is pretty normal. Do watch some YouTube on trimming and don’t over trim. Plan for 1.5 hours a lb to be safe it’ll likely finish sooner but you can hold it in a cooler for like 6-8 hours if you have a decent one and it’ll still be steaming when you take it out to slice…. oh and use way way more seasoning then you think you need
Edit: also consider doing a boat instead of full wrap because komodo grills hold in moisture way more then other smokers and so won’t set the bark as good or as soon
Did a 14lb costco brisket Monday at 225deg. Started at 930p Sunday, foil boat at 8am done and rested into yeti at 1230. Delicious at 6pm

Choice is a great cut to render the fat that’s available. Prime grade is just melt in your mouth goodness. If your costco has the wagyu brisket. Try it it’s more sumptuous than the grade
