Im new to cooking pork, this being my second time ever, I’m not sure what I’m looking at so any feedback would help

Get a meat thermometer and check the middle. 145 is the temp to get there. After that, it’s whatever your preference. I like it at 145.

Sure. Let the meat rest before AND after cooking.

Medium rare pork. Just pop it in the microwave for half a minute and let it rest. You’ll be fine.

Use a thermometer and you’ll never have to question. Put that in the microwave or back on whatever cooking vessel you were using for a short amount of time and you’ll be fine.

Little under but pork has been safe to eat for most/all of our lives.
In its current state the us doesn’t even grade pork because it all grades extremely high. Pork was cleaned up in the 80’s culminating in the “other white meat” ad campaign in 87.
Bad juju about pork comes from our grandparents/great grandparents and passing it down generationally.
