My husband loves calabacitas, so I decided to make him Calabacitas con Crema ๐Ÿ˜‹ If you’re looking for a meatless option, this oneโ€™s perfect. I love serving it in tacos with handmade tortillasโ€”so delicious! ๐Ÿฅฐ

CALABACITAS CON CREMA INGREDIENTS:
โ–บ 7 calabacitas or Mexican squash
โ–บ 1/2 white onion
โ–บ 2 minced garlic cloves
โ–บ 1 serrano pepper
โ–บ 2 fresh corn on the cob
โ–บ 5 oz spinach
โ–บ Salt and pepper to taste
โ–บ 1 cup sour cream (I’m using salted crema Mexicana)
โ–บ Queso fresco or your favorite cheese

My husband loves calabasittas, so I decided to make him calavasittas crema. These are so delicious and easy to make. Let me show you how. For this recipe, I’m going to be using about seven calabasas Mexican squash. And I’m going to dice them very small. In a pan set to medium heat with some oil, I’m going to sautรฉ half of a white onion, two minced garlic cloves, one serrano pepper, and corn. I’m using two fresh corns that I removed from the cob, or you can use canned corn. After about 3 minutes, we’re going to add in the calabasitas. Mix it in. And then we add 5 oz of chopped spinach. Once it’s all mixed in, we’re going to season with some salt and pepper. Now we cover it up and let it cook for 5 minutes. It’s been 5 minutes and as you can see, our calavas are looking so delicious. Now I’m going to add in one cup of sour cream. I’m using salted crema Mexicana. Mix until it’s well incorporated. And this is the perfect time to check for more salt. Mine is just perfect. And now we can add the cheese. I’m going to be using queso fresco, but you can use a cheese of your choice. Cover and let it simmer for about 2 minutes. Now our calavas are ready. This is the perfect meal if you’re looking for a meatless option. They’re so delicious and I just like to eat them like this. I love the soup version of calabasitas that has chopped calabasitas, zucchini + yellow squash, green chili peppers, cilantro added to the broth, stir in sour cream and mild shredded cheese, season to taste. I like your recipe using spinach, yellow squash, white fish or chicken breast served with corn tortillas. YUMMY!๐Ÿ˜Š
