Whipped Feta Bruschetta Dip – The Internet’s New Favorite Appetizer!
Ingredients:
For the whipped dip:
– 1 cup greek nonfat plain yogurt
– 1 cup feta crumbles
– 2 tbsp olive oil
– Zest from 1 lemon
– 1 garlic clove
– 1-3 teaspoons lemon juice
– Freshly ground salt and pepper
For the bruschetta topping:
– 1 cup diced heirloom cherry or grape tomatoes
– 1 small garlic clove, finely minced
– 6 large basil leaves, julienned
– 1 tbsp extra virgin olive oil
– 1 tbsp balsamic vinegar
– ¼ tsp Salt
– Freshly ground black pepper
For the crostini:
– 1 demi French baguette, cut diagonally into 1/2 inch slices (you’ll get about 10 slices)
– 1 tbsp extra virgin olive oil
– Season with Honey Garlic Seasoning
Instructions:
1. Make the whipped feta yogurt sauce: add yogurt, feta, olive oil, lemon zest, lemon juice and garlic to the bowl of a food processor.
2. Process until smooth and well combined, scraping down the sides as necessary.
3. Add salt and pepper to taste and process once more.
4. Add to a shallow bowl that’s great for dipping.
5. Place into refrigerator
6. Preheat the oven to 400ºF.
5. Make the bruschetta topping: In a medium size bowl, add the chopped tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper and mix it together with a spoon. Set aside while you prepare the rest of the dip.
6. Arrange baguette slices on a baking sheet and brush the top of each slice with olive oil. Gently rub the garlic clove on one side of each piece. 7. Bake for 6 to 8 minutes, or until lightly golden brown on the edges.
