I’m convinced the first person who made gumbo just accidentally burnt the R and then told everybody it was on purpose because standing there and actually staring for an hour is actually crazy. But guess what? It turned out very nice. So we ain’t complaining, baby. Gumbo is one of those dishes that’s very easy to make but also very easy to mess up. So buckle up cuz you’re going to need a little patience, baby. Now to make everything go very nice and smooth. Go ahead and prep everything. The bell peppers, the onions, the garlic, the celery, all of it. Prep it and set it to the side. Season the chicken with very nice salt and pepper seasoning, some salt and pepper. a little love vinegar to help the flavor penetrate deeper. Also, make sure you prep some sausage because it’s going to bring in so much flavor to the gumbo. Using the pot over mediumigh heat, we’re going to throw in the chicken. We’re just looking for a nice color. We ain’t looking to cook him through. Remove, set it to the side, and come through with the sausage and do the same thing. In addition to the oil we had left in the pan, I threw in some clarified butter cuz everything’s better with butter, man. We added some flour and we start making that route. And that’s when all the fun starts. Now, no joke, you have to steer for at least 45 to an hour on low heat until it reaches this dark color. Then, and only then, can you come through with the peppers and onions, sautΓ© that for a bit before you come through with the celery along with the garlic. Now, we’re going to come through with some unsalted chicken stock, making sure we’re stirring the entire time. I season with Cajun seasoning, smoked paprika, my very nice salt pepper seasoning. Just make sure to go light-handed with the seasoning cuz you can make it salty because gumbo is a stew. And when it sits, the salt accumulates. Now, all that’s left to do is to throw back in the protein. Save the shrimp for last cuz it don’t take long at all to cook. Throw some parsley to balance out the calories and all you got to do is eat, baby. Very nice.
