The first picture is with smoked salmon. On the third picture, I used some… ummm… tinned mackeral (I know I'll get hate for that and I'm sorry). I also tried to hide some of the failed bits at the bottom. I didn't have a roller so I did all the rolls by hand. The wasabi is just cheap tubed (horseradish) stuff too, since where I'm from getting proper ingredients isn't always affordable/easy.

    I’m Japanese, if it tastes good, it is good. I approve 👍 Try adding some shiitakes next time if you’re in to mushrooms! It will be a nice addition of earthy sweetness to the palate

  9. There’s a lot of rice here, but honestly it could be ok depending on how aggressively seasoned your ingredients are (and tinned mackerel would definitely need more rice). People saying you’re using too much rice without tasting the ingredients you put inside have no idea what they’re talking about about.

    For a traditional style roll that uses a high ratio of rice to filling, see a kanpyomaki or ume-shiso maki.

    Other than that, I like that the cuts are clean and even, and the rolling has an equal amount of rice all around.

    All in all the technique is decent. I leave evaluation of the filling as an exercise for the eater.

    I am curious if you cooled the rice rapidly after cooking. It’s hard to tell from the photos, but sometimes the rice will continue to cook after you take it out and it gets a little mushy. It’s hard to tell from the photos.

  20. For home sushi, this is way beyond the level of consistency I’d expect. Rice is even and consistent all around. I don’t see any rolls collapsing. And you made a lot.
